BEETS IN MY SMOOTHIE!

It's smoothie week! I'm making so many smoothies that I can't keep track of all of the amazing combinations I have come up with (did you see my Chaga Mushroom Smoothie from the weekend?). I made this one this morning and thought that I would share it! We bought some gorgeous golden beets at the market on the weekend which give this smoothie its wonderful spring colour. Beets are chock full of B vitamins and a phytochemical called glycine betaine known for lowering homocysteine levels in the blood (think clotting and plaque formation)! This is a great way to maximize the health benefits of beets by eating them raw! 

GOLDEN BEET SMOOTHIE
Serves 1-2
INGREDIENTS:
✿2 cups homemade almond milk
✿1 small golden beet
✿1/2 a small nectarine
✿1/4 ripe avocado
✿3 large frozen strawberries (1/2 cup)
✿1 tsp maca powder
optional: 1 tsp bee pollen 
optional: sweetener to taste   

INSTRUCTIONS:
1) Chop the nectarine and beet into small pieces.
2) Place all of the ingredients in a high power blender and blend until smooth & creamy!
3) Slurp with a funky straw (it makes smoothie consuming so much more fun!)

Song of the day....Just Beat It...get it :)
