Greetings food enthusiasts! It's Simon here back for another addition of "Snacks with Simon" and do I ever have a treat in store for you. These are a great snack and come in very handy on those days that you arrive home in a hunger panic and need emergency food. You can make lots of variations to these depending on what nuts, seeds and other items you have in your cupboard (Malakai says try goji berries, chia seeds and unsweetened shredded coconut). 
(Makes about 12)
-15 fresh dates
-2 heaping tbsp peanut butter (or other nut butter)
-2 heaping tbsp hemp protein powder
-2 heaping tbsp ground flax seed
-4 tbsp whole flake oats
-4 tbsp sunflower seeds
-1 tbsp coconut oil

1) Pit 15 fresh dates.
2) Blend the dates and remaining ingredients in a high power blender or food processor until combined (but not liquified - there will still be chunks).
3) Dates tend to vary in moisture content so check your mixture to see if you need to add a little bit more dry ingredients or more wet ingredients. The dough should be able to form into a ball without falling apart.
4) Roll the dough into small balls in the palms of your hands. 
5) Place the balls in small cups (or in a parchment lined container).
6) Place in the fridge or the freezer for at least 15 minutes, the coconut oil with harden and the snacks will be ready to enjoy!
