I have been thinking about making these for a long time now. I saw somewhere that someone made wraps with zucchini slices and thought it was an interesting concept. So last night, in attempts to feed my mother and sister Simon and I adventured in to the world of veggie wrap wraps. We started off with the zucchini idea I had seen but soon realized that whoever did that must have been lying because zucchinis do not wrap very easily without breaking. Thus the cucumber wrap came to be. I was a little apprehensive at first but they turned out really well. I used a sunflower lime pate and alfalfa sprouts but you could use any pate or spread you like and any sprouts or other veggies you want! So versatile right!?
-1 cucumbers
-1 cup sunflower seeds
-Juice of 2 limes
-1 clove garlic
-1/4 cup water
-1/4 tsp tumeric
-1/2 tsp cumin
-1/2 cup alfalfa sprouts
2) Cut the cucumber into very thin slices. Be careful! You could use a mandolin for this if you have one. 

3) Lay the cucumber strips flat and spread the pate over them. 

4) Top the pate with a small amount of sprouts. 

4) Roll the cucumber strips starting at the smallest end and secure the roll with a toothpick.
