Wowsies! Somehow I have figured it out :). If you have been following my blog you will know that I have made several attempt at making ice cream. They have all come out very well and tasted fabulous but nothing compares to this baby! Check it out...it looks and tastes like the real deal and is just like any hard but scoopable ice cream. The good news is it is sugar free - dairy free- gluten free - and yuckies free! In a very good article about store bought ice cream here the author says that, "many commercial ice creams today are simple chemical concoctions presented in appealing packaging designed to sell a product that is not fit for human consumption." So what exactly can be found in your store bought ice creams? Look below and ask yourself at first glance do you know what any of this stuff is? Click on the links for more info on each chemical. Let's have a looksie.
WHAT'S IN YOUR ICECREAM (some common ones):
Deithyl Glycol: also common in antifreeze and paint removers
Aldehyde C-17: cherry flavour (found in dye, plastic, rubber)
Piperonal: vanilla flavour (human skin irritant)
Ethyl Acitate: lemon flavour (only "mildly toxic by ingestion")
Disodium Phosphate: "acute poisoning by ingestion"
Propolyne Glycol : found in antifreeze
Polysorbate 80: widely used in cosmetics..(some studies point to this chemical correlating with fertility issues).
****Even though there is only a small amount of the above chemicals in ice cream - do we really want to be eating anything that can cause "acute poisoning or is mildly toxic"? Why do we need these ingredients in ice cream anyway?
****The FDA has a very complex system for "frozen desserts" check it out here. After reading this it seems to me like the ingredients that you find on an ice cream box will a) not be everything that is in the ice cream and b) be extremely confusing with names changed and so on.
LET'S MAKE ICE CREAM: MINT CHOCOLATE CHIP!
*ADAPTED FROM THE CRUDESSENCE COOKBOOK
-1 1/2 cups almond milk (make your own!!!)
-1 1/4 cups soaked cashews (soaked in water for 3-4 hours and then rinsed)
-1 tbsp soy lecethin (buy at your health food store)
-1/4 cup sweetener (agave, raw honey, xylitol)
-1 tbsp vanilla
-1/4 tsp sea salt
-2 drops mint essential oil
-1 cup dark chocolate chips (make your own click here)
1) Blend all ingredients except for the chocolate chips in a high power blender.
2) Transfer the mixture to a bowl and refrigerate for 2 hours
3) Take the bowl out of the fridge and add in the chocolate chips
4) Turn the ice cream maker on and slowly pour in the mixture.
5) Allow the machine to run for 30 minutes or until the machine stops turning
6) Remove the inner container from the the machine and place it in the freezer for 20-30 minutes.
** If you don't have an ice cream maker not to panic! Blend the ingredients as noted above, add the chocolate chips and pour the mixture into ice cube trays. Freeze the mixture in the trays for about 3 hours until almost completely frozen (but not quite). Then blend the cubes in a high power blender until it smooths out (it will be slightly more like soft serve then when making it in the ice cream maker but it will taste the same!
