SUMMER SOUP WITH SIMON

Ahhhhh the summer soup. It is cold and refreshing on a hot summer evening. This one is great for the hot summer months because it is served cold, quick to make and you don't even have to turn the oven on. Every day our plants get bigger and bigger and the herbs are now big enough to start using (see them in the background of the picture below). The basil for this soup was picked from the garden. Yay! 
SUMMER GAZPACHO

Ingredients:
-4 tomatoes chopped
-1 red bell pepper chopped
-2 cloves garlic pressed
-1 cup dehydrated almond pulp (or almond flour)
-1/2 chili pepper
-1/2 cup fresh basil
-1/4 cup olive oil
-1 tbsp apple cider vinegar
-salt and pepper to taste 

Instructions:
1) Blend all ingredients together in a high power blender until smooth.
2) Serve
