Simon and I had a super duper good weekend getaway at a friend's cottage these past few days and thus have not been posting. I got to get out of the city, swim in the lake, chill a whole lot and even show off my zucchini noodles! I have posted about these before however I thought it was about time we revisit them as they are so versatile and make the perfect lunch time snackeroo. Investing in a fabulous spiralizing contraption definitely gives you bragging rights when friends stare in awe at the curly noodle looking things and say..."those are actually made of vegetables??". This time we are adding some Super Power with the Pesto. Our basil plant is growing like a weed at the moment and the markets are filled with oodles of it too. This is as simple as recipes can get! Try it out.  
-1 zucchini
-1/4 cup basil
-3/4 cup pine nuts
-2 tbsp olive oil
-1/4 cup water
-2 tbsp lemon juice
-1 tsp sea salt
-1 big clove garlic
1) Spiralize your zucchini in an amazing spiralizer machine or use a carrot peeler to thinly peel the zucchini. 
2) Blend the basil, pine nuts, olive oil, water, lemon juice, salt and garlic in a high power blender until smooth.
3) Pour the sauce on top of your noodles and mix until thoroughly coated (you may not need to use all the pesto sauce). 
4) Enjoy!
