REMEMBERING LUNCHABLES...

Anyone around my age will remember lunchables. Those perfectly wrapped ready to go lunches that all the other kids (not me of course) would get to dig into at 11:30 every day. While doing a little bit of research on lunchables (apparently they are still around), I came across this quote from Kraft:

"No matter which lunchtime favorite you pick and pack, your kids will love the delicious taste. Plus, we've added 3 NEW Lunchables with a full serving of fruit!*"

Now take a look at the ingredient list for one of their lunchables......

Ingredients: APPLESAUCE: APPLES, WATER, CONCENTRATED APPLE JUICE, ASCORBIC ACID (VITAMIN C). I will not go through any of the ingredients but rather stick to one of Michael Pollan's food rules and say that you should not eat anything if there are ingredients listed that you do not know or can not pronounce. End of Story! To the folks at Kraft lunchables I commend you on your excellent example of "health washing" as you now include fruit in the ridiculously over processed crap you call food.

Now here is my alternative...a lovely lunch from today -A LUNCHABLE: MALAKAI STYLE




TOFU DIP
Ingredients:
-1/2 block firm tofu (chopped)
-1/4 cup water
-1 chopped onion
-2 minced cloves of garlic
-1 tbsp chopped ginger
-2 tbsp tamari
-1/2 tsp cayenne

Instructions:
1) Blend all ingredients in a food processor or high power blender until smooth.



GREEN BEAN TOMATOE SALAD
Ingredients:
-1 cup chopped green beans cooked and cooled
-1 chopped tomatoe
-1 clove minced garlic
-2 tbsp flax oil
-1 tbsp balsamic vinegar
-1/8 tsp dijon mustard
-1/2 tsp sea salt

Instructions:
1) Steam green beans until cooked but not squishy and cool in the fridge.
2) Mix garlic, flax oil, balsamic, mustard and salt in a small bowl and mix.
3) In a medium size bowl add green beans and tomatoe. Pour salad dressing on top and mix.
4) Serve!
