RAW ZUCCHINI LAZAGNA

I am so excited about my new found love...its a cookbook. There is an amazing raw food restaurant in Montreal who just put out a cookbook in french. I finally bought it the other day and have been attempting to translate some of the recipes to english so that I can use them...because they are so so yummy. My first creation....lazagna! It is so so so scrumptious and a great meal for summer time as it is lighter than real lazagna and gives you tons of vegetable and nutty goodness. Don't be afraid by the number of instructions...it actually isn't very hard at all. Now as I've said before I do eat cooked food...but I find that raw food in the warmer months makes me feel a lot better. You get more nutrients when you don't cook your food and eating more raw foods makes you increase your veggie intake. There is some serious tastiness going on in this raw recipe.
