I am so excited about my new found love...its a cookbook. There is an amazing raw food restaurant in Montreal who just put out a cookbook in french. I finally bought it the other day and have been attempting to translate some of the recipes to english so that I can use them...because they are so so yummy. My first creation....lazagna! It is so so so scrumptious and a great meal for summer time as it is lighter than real lazagna and gives you tons of vegetable and nutty goodness. Don't be afraid by the number of actually isn't very hard at all. Now as I've said before I do eat cooked food...but I find that raw food in the warmer months makes me feel a lot better. You get more nutrients when you don't cook your food and eating more raw foods makes you increase your veggie intake. There is some serious tastiness going on in this raw recipe.

RAW LAZAGNA (adapted from the Crudessence cookbook)

-2 medium zucchinis (cut into long thin strips)
-1/2 cup fresh basil chopped

Tomatoe Sauce
-3 medium tomatoes chopped
-1 1/4 cup sundried tomatoes chopped
-1 tbsp raisins 
-1/2 cup chopped carrots
-1/2 onion chopped
-1 clove garlic pressed
-1 tbsp olive oil
-1 tsp chili flakes
-1 tsp dried oregano
-2 tbsp fresh parsley
-2 tbsp fresh basil

1) Blend tomatoes in a high power blender until liquified. 
2) Add the rest of the ingredients to the tomatoe puree and let it sit for 10 minutes.
3) Blend for a few seconds more (there should still be some clumps).

-1 1/3 cup macadamia nuts
-1 tbsp lemon juice
-3/4 cup water
-1 tsp sea salt
-1/2 tsp ground pepper
-1 small clove garlic pressed

1) Blend the macadamia nuts in a high power blender until they become a crumble.
2) Add the rest of the ingredients and blend until creamy.

Nut Topping
-1 cup brazilian nuts
-1 clove garlic
-1 tsp sea salt
-1/2 tsp ground pepper

Instructions: Blend all ingredients in a high power blender or food processor until it is a crumb like consistency.

**Layer as follows: zucchini layer, tomato sauce layer, zucchini layer, cheese layer, basil layer, zucchini layer, remaining tomato sauce layer, nut topping layer. EAT UP! :)
