HOLY GUACAMOLE! -A PERFECT DAY FOR A PICNIC


For my birthday in December Simon gave me the most perfect present ever - a picnic basket. It's beautiful and wicker with little wine glasses and a plaid interior and I just could not wait to use it! It didn't take me long to use it either - even though we were smack in the middle of winter - hello indoor picnics! Indoor picnics are fabulous however they do not compare to the real thing -with sun and everything. Today was the first perfect day for a picnic! Actually, today was the perfect day.

Simon was supposed to start work today for the summer...however I woke up to him telling me that he had re-read his email and his work actually didn't start until tomorrow. So, I put off everything I was going to get done today and we had a lovely lovely morning. We got up early, went for a bike ride around Ile des Soeurs and then came home and had a picnic! In searching for the perfect picnic food we agreed that guacamole was by far the best thing you could make for such an occasion.  It's super duper easy, very delicious and most important good good good for you.

FUN FACTS ABOUT OUR AVOCADO FRIENDS:
I am very happy about my picnic basket!
-provide all 18 amino acids for the body to make a complete protein
-have good fats (monounsaturated) which boost good cholesterol (HDL)
-they contain vitamin C, E, K, carotenoids (such as betacarotene), selenium,potassium,zinc, omega 3 fatty acids  which = bye bye inflammation.
-there are over 80 varieties of avocados!

HOW TO FIND RIPE AVOCADOS AT THE STORE:
-some varieties will be darker in colour when ripe.
-feel the avocado to see how soft it is...under ripe avocados will be hard and over ripe avocados will be mushy so try to find something in the middle.
-if you can't find ripe ones at the store buy a few unripe and put them in a paper bag for a day or two on the counter. They should ripen quicker this way.

HOLY GUACAMOLE RECIPE! Serves 6
Ingredients:
-6 ripe avocados
-1 onion chopped
-2 tomatoes chopped
-handful of cilantro chopped
-2 cloves of pressed garlic
-1 lime (juice only)
-1 tsp salt
-1 tsp cayenne

Instructions: 
1) Mix all ingredients in a bowl and smush it with a fork or a potatoe masher until well combined.
2) Dip bread, pita, cut up veggies, etc!


Holy guacamole I'm so excited its picnic season!
