HAPPY WEEKEND! ALMOND CASHEW VANILLA ICECREAM!!!!


It's been 30 degrees outside and I have not been feeling like making anything hot. I love ice cream however for several years I have not been able to eat it because I no longer eat dairy. The only ice cream I have been able to consume is Coconut Bliss which is made with coconut milk and agave nectar. If you are looking for a healthier ice cream choice to buy at the store Coconut Bliss is a good one but it can be rather expensive. As we know however, the healthiest food you can consume is the food that you make yourself! Simon and I recently purchased an ice cream maker so that we can make our own ice cream without breaking the bank on Coconut Bliss. I am so excited about this new gadget that I will be making so much ice cream this summer so keep checking back for new ice cream creations. If you don't have an ice cream maker I recommend getting one! They are relatively inexpensive as appliances go (about $50) but you can also check craigslist to find one for even cheaper. Mine is a Hamilton Beach Ice cream and Frozen Yogurt Maker from Zellers.  If you don't want to purchase a new appliance then check below ** for other ways you can enjoy ice cream creations. ALMOND CASHEW VANILLA ICE CREAM
(adapted from the Crudessence Cookbook)

Ingredients:
-1 1/2 cup almond milk (make your own!!!)
-1 cup soaked cashews (overnight)
-1 tbsp soy lecethin (buy at your health food store)
-1/4 cup agave nectar (sweetener)
-2 tbsp vanilla
-1/4 tsp sea salt

Instructions:
1) Blend all ingredients in a high power blender.
2) Transfer the mixture to a bowl and refrigerate for 1 hour.
3) Turn the ice cream maker on and slowly pour in the mixture.
4) Allow the machine to run for 30 minutes.
5) Place the inner container in the freezer for 30 minutes.
6) Serve!

**If you don't have an ice cream maker blend the ingredients and pour them into ice cube trays. Freeze these trays for about 2-3 hours or until almost completely frozen but not quite. Then blend the cubes in a high power blender until it smooths out (this will be a bit more like soft serve then when making it in the ice cream maker).

-goji berries
-raisins
-chocolate sauce (cacao, honey, coconut oil)
-fresh or frozen fruit
-hemp seeds
-chia seeds
-cashews
-chopped almonds
-GO CRAZY! INVENT YOUR OWN HEALTHY TOPPING INGREDIENTS
