GARDENS + SALADS + SUMMER OH MY

                            

Yes another salad post! Don't get mad I just want to make sure that everyone is prepared for the summer ahead with a bunch of delicious and nutritious salad recipes to choose from. On the long weekend Simon and I planted a bunch of plants on our balcony so soon we will have our own fresh tomatoes, lettuce, chard, cucumbers and herbs to play with in our salads. I do not have a green thumb at all...but I'm trying and slowly but surely my little veggie babies are growing! I was away for part of the weekend and I got back and the tomatoes were so much bigger and maybe I'm becoming one of those excited gardener types because I can not wait until the first one turns red!




CAULIFLOWER TOMATO SALAD
Ingredients:
-1/2 cauliflower
-1 cup baby tomatoes
-3 cups coriander finely chopped
-1/4 red onion finely chopped
-handful fresh mint chopped
-1 tsp sea salt
-1/4 cup lemon juice
-1 tbsp flax seed oil
-1 clove garlic pressed
Instructions:
1) Blend the cauliflower in a blender or food processor until it becomes a couscous like consistency.                                                                                                                                                     
2) Mix all of the ingredients in a large bowl with the cauliflower and serve!                                                                                                                                                                                                                             

YELLOW BEAN SALAD
(adapted from Cruddessence Cookbook)
Salad Ingredients:
-4 branches celery
-1 red pepper chopped
-1 cup yellow beans chopped
-1/4 - 1/2 cup cooked and cooled quinoa
-1/2 cup coriander chopped
-1/4 red onion finely chopped
Sauce Ingredients:
-1 small chili
-6 fresh dates pitted
-1/2 cup flax seed oil or olive oil
-1 tbsp lemon juice
-1 pressed clove garlic
-1/3 cup apple cider vinegar
-small handful fresh coriander chopped
-1/2 cup water
-1 tsp sea salt
-1/2 cup sunflower seeds
Instructions:
1) Combine sauce ingredients in a blender or food processor and mix until combined and smooth.
2) Place all remaining ingredients in a bowl and pour 3-4 tbsp of the sauce mixture on the salad.
3) Place the rest of the sauce in the fridge for another day- another salad!
4) Mix and serve.

OH MY HOW GREAT IS THE START OF SUMMER!
