Presently I am struggling to find foods that don't make my tummy mad mad mad at me. I am now calling my diet the FREE FROM EVERYTHING diet. I have found myself quite discouraged lately about the endless list of foods I can't eat. What I have discovered on this free from everything diet however is that there are actually a lot of foods that I can eat and a lot of possibilities that I have yet to try. I realized that the free from everything diet takes on a whole new meaning when you look at it from this perspective. I am free from tummy pain, I am free from feeling sick and I am free to do the things that I love to do most when I eat in a way that makes my body happy. Instead of listening to the ways in which society wants me to eat I have to listen to the ways in which my body wants me to eat and if that means no sugar, no yeast, no gluten, no dairy.....and so on....then so be it. I would rather be FREE TO BE MY BESTEST ME EVER than be sick.
FREE FROM EVERYTHING BREAD
-2 1/2 cups almonds
-1/4 cup arrowroot starch
-1 tsp baking powder
-1 tsp baking soda
-1/2 tsp sea salt
1/4 cup raw pumpkin seeds
1/4 cup sunflower seeds
1/4 cup chia seeds
1/2 cup almond milk
1 tbsp olive oil
Instructions:1) Grind almonds into a flour using a high power blender or food processor.
2) Combine the flour with the rest of the ingredients and combine until smooth.
3) Grease a small bread pan with olive oil and pour the batter into the pan (it will be more like a batter than a dough)
4) Bake at 350 F for 45 minutes.
5) Remove and cool on a drying rack.
